Yield: 6-12 servings
Stuffing
2 lb. fresh spinach
thinly sliced, dried and salted
1 tbsp. salt
1/3 cup olive oil
1 cup pancetta, thinly cubed
1 cup chopped onion
1/4 cup chopped fresh parsley
1/4 cup bread crumbs
1 egg, lightly beaten
1/8 tsp. freshly ground pepper
2 tsp. dried oregano
Lamb
1 Leg of lamb, trimmed, boned
1/4 cup olive oil
2 lg. garlic cloves, minced
2 tsp. salt
1/2 tsp. black pepper
1/2 tsp. fresh thyme
1/2 tsp. cumin
4 oz. cheese (feta or provolone)
Heat oil in large skillet over medium-high heat. Add pancetta and onion and saute until soft, about 10 minutes. Add spinach and parsley and saute for about 2 more minutes. Remove from heat and cool for 5 minutes. Stir in bread crumbs, egg, oregano and pepper.
Preheat oven to 400 degrees. Place lamb skin side down on work surface. Flatten slightly. Combine oil, garlic, salt, pepper, thyme and cumin in small bowl and beat well with fork. Rub half of oil mixture over top of lamb. Spread spinach mixture over. Arrange feta cubes or provolone slices over spinach. Tie with string, starting at thicker end. Rub outside thoroughly with remaining oil mixture. Transfer the lamb to large roasting pan. Add 1 cup of hot water. Roast for about 45-60 minutes. Reduce oven temperature to 350 degrees, uncover and continue roasting for 15-30 minutes longer or until browned and a meat thermometer reads 160 F, basting occasionally with pan juices. Let stand for 10-15 minutes before slicing. Serve with delicious Swiss Hero potatoes.
